Bang Bang Chicken

1. Cut the chicken thighs into bite-sized pieces.

2. In a bowl, combine the chicken, soy sauce, mirin, grated ginger, minced garlic, and lemon juice. Mix well and let it marinate for at least 30 minutes.

3. In another bowl, whisk together the mayonnaise and sweet chili sauce.

4. Put the potato starch into a bowl. Add the marinated chicken pieces and coat each piece evenly with the potato starch.

5. Heat the oil in a large pot or deep fryer to 350°F (175°C). Carefully add the chicken pieces and fry for 4-5 minutes or until golden brown and cooked through.

6. Remove the chicken from the oil and place it on a wire rack to drain.

7. In a clean bowl, combine the fried chicken and bang bang sauce. Toss gently to coat.

8. Grate the cheddar cheese on a hot pan and form a cheese crisp. Shape it into a cone while it's still warm and pliable.

9. Fill the cheese cone with the bang bang chicken.

10. Garnish with chopped chives and serve immediately.
