A simple and satisfying meal, the dosirak or Korean lunchbox is a great way to use up leftovers from the fridge, making this budget-friendly and super versatile. It's as easy as 1,2,3 to assemble and makes for a fulfilling lunch or dinner option.
1. In a bowl, mix together tuna, chopped onion, gochujang and mayonnaise until evenly combined.
2. Fill a triangle mold with cooked sushi rice, add the tuna mixture and top with rice again.
3. Wrap the seaweed around the onigiri, removing the mold.
4. Slice two sausages and coat them in a flour and egg mixture. Pan fry them until golden brown.
5. Fill your lunchbox with rice, side dishes (kimchi, anchovies and black beans) and the pan-fried sausages.
6. Fry an egg and place it on the rice, finalizing your dosirak.
