Mac and Cheese Chicken Schnitzel

1. Butterfly the chicken breast and tenderize it using a fork. Butterfly again, wrap in plastic wrap, and pound thinly. 2. Dip the chicken breast in flour, then egg, and coat thoroughly with breadcrumbs. 3. Deep-fry the breaded chicken until golden brown and crispy. 4. Grate cheddar cheese, and dice the bacon after cooking until crispy. Chop the bacon into bits. 5. Sauté chopped red onion in butter, then add flour and milk. Stir until it becomes a creamy sauce. Add the cheddar cheese and cooked macaroni, mixing well. 6. Spread the cooked mac and cheese on top of the fried chicken, then sprinkle bacon bits and breadcrumbs. 7. Garnish with freshly chopped parsley before serving.
